Theaflavin (TF) and its derivatives theaflavin 3-O-gallate(TF3G), theaflavin 3'-O-gallate (TF3′G) and theaflavin 3,3'-di-O-gallate (TFDG), known collectively as theaflavins, are antioxidant polyphenols Flavan-3-ols that are formed from catechins such as in tea leaves during the enzymatic oxidation (called fermentation) of tea leaves, such as in black tea. Theaflavins are types of thearubigins, and are therefore reddish in color. Analogous compounds include EGCG in green tea, theaflavins are not found in green tea. It was reported that theaflavins have good medical functions and health protection effects, such as preventing occurrence of atherosclerosis, preventing and treating cardiovascular disease, hyperlipidemia, lipid metabolism disorders, cerebral infarction and improving microcirculation and blood rheological characteristic. In addition, theaflavins have other bioactivity such as anti-tumor, anti-oxidation, anti-aging, enhancing immunity. Analysis of the thiobarbituric acid–reactive substances (TBARS) and conjugated dienes produced during LDL oxidation revealed antioxidant activity was in the order: TFDG>ECG>EGCG≥TF3′G≥TF3G> TF≥EC>EGC
